Blackened Salmon with Avocado Salsa

Today I have a super fast, easy and tasty food for you, a blackened salmon with avocado sauce. This recipe could not be simpler, season the salmon with a Cajun seasoning and then fry until crispy and serve covered with a fresh and creamy avocado sauce. The Cajun seasoning is full of flavor and includes a spicy heat that combines perfectly with the buttery salmon and the fresh avocado sauce. 

The salmon is skillet over high heat in a pan until the skin and outside are crisp and the inside remains nice, moist and tender. The avocado sauce goes incredibly well with the blackened salmon and sometimes I like to change things a little when served with an avocado and cucumber sauce, where the crispy and juicy cucumber adds an incredible texture to everything.

Ingredients:

For the blackened salmon:

1 tablespoon of oil

4 (6 oz) pieces of salmon

4 teaspoons of Cajun seasoning

For the avocado sauce:

2 avocado, cut in cubes

1/4 cup red onion, cut in cubes

1 jalapeño, finely diced

1 tablespoon coriander, chopped

1 tablespoon lime juice

salt to taste

For the avocado and cucumber sauce:

2 avocado, cut in cubes

1 cup of cucumber, cut into cubes

1/4 cup green onion, cut in cubes

1 tablespoon chopped parsley

1 tablespoon of lemon juice

salt to taste

For the blackened salmon:

Heat the oil in a thick-bottomed skillet over medium-high heat, add the salmon, seasoned with the cajun dressing, and cook until browned to slightly blackened before turning and repeating for the other side.

For the avocado sauce:
